How to Make Simple Pie Cookies

It's that time of year where we make every delicious dessert we know how to make and even a few we don't know how to make. I feel like we're missing something. We are missing several seasons to enjoy delicious desserts like simple pie cookies. They're cute and easy and we can do this any time of the year we want! So mix up some cookie dough and let's get started!
Supplies for Simple Pie Cookies:

Recipes:
Sugar Cookie Recipe or Add a Little Drama to Your Cookies or Chocolate Roll-Out Cookie Recipe
Royal Icing Recipe or Half a Batch of Royal Icing Recipe
Cookie Cutter:
Sailboat Cookie Cutter from Mike at SemiSweet Inc. I bought the 'Regular sized cutter' that's 3.25″ tall / 3.2″ wide in case you were interested.
Royal Icing Colors:
(The icing is 15-Second royal icing consistency and is placed in disposable decorating bags. I used AmeriColor Soft Gel Food Paste for the colors.)
Blue- Sky Blue
Red-Super Red or you can use Tulip Red so the icing doesn't have a bitter taste.
Tan-Ivory
Tools:
Disposable Decorating Bags- Flour Box Bakery or Truly Mad Plastics
Food Safe Marker
White food gel color and a stiff brush to spatter the white spots on the pie pan.
Turkey lacer
- Begin by making your cookie dough and cutting out the sugar cookies shapes. I found that Mike at SemiSweets Inc. has a great Sailboat Cookie Cutter that worked great for a nice tall pie. Once the cookies are baked let them cool completely before you begin to decorate.
- Trace the top of the pie with the food safe edible marker.
- Outline and flood the pie pan with the baby blue royal icing. Use the turkey lacer to pop any air bubbles and spread the icing smoothly around the cookies.
- Let the royal icing dry for a few minutes until it forms a crust.
- Cut or rip a piece of parchment paper to cover the top of the pie.
- Use the stiff brush to spatter the white food gel onto the cookies. You may want to dip the brush into the white food gel color and then dab the brush on a paper towel to remove the excess. This is my favorite part!
- Remove the parchment paper and look what a good job you did!
- Let the cookies dry for a bit before you move on to the top of the pie.
- Outline and flood the top of the pie with the red royal icing.
- Let it dry.
- Outline the top of the pie and make several teardrop shapes and let it dry for about ten minutes.
- Flood the top of the pie, but don't flood inside the teardrop shapes.
- Add a cherry on top of the pie and you can add a touch of white to make it shine. I did one that way and wished I'd of done them all that way.
- Use the red royal icing to make the cherry on top. Use some white food gel color or royal icing to make a little sparkle on top.
- Next, use the ivory royal icing color to pipe the border around the pie.
- Let the cookie dry completely before you package or stack them.
